Build your own cookie ice cream sandwich night

This is the kind of dessert activity where a little mess is part of the fun.

Set out chocolate chip cookies, slightly softened ice cream, and small bowls of sprinkles or mini chocolate chips.

Let everyone choose two cookies. Add a scoop of ice cream to one, gently press the second cookie on top, and roll the edges in a topping.

Make them one at a time and enjoy right away, or pop the finished sandwiches into the freezer briefly to firm up.

Kids get to make their own creation. Grown-ups get an ice cream sandwich.
